  1. Surprisingly I am interested in trying the recipe. Not sure how my boys will respond but I almost got them to eat fish this past week. Almost. I do know for sure that my preparation and presentation will NOT be remotely as asthetically pleasing as Karen’s.

    Nicole, if you are reading this, can you link your Kale chip recipe. Shockingly, I might try this one as well.

  2. OOH, salt + vinegar! I might have to try those…

    I happen to have Nicole’s recipe, so here you go! But be warned, they’re super addictive.

    1 bunch of kale, chopped into potato chips size pieces
    2 tsp. olive oil
    Sea salt to taste

    Toss leaves with olive oil so leaves are coated well. Spread kale onto baking pan and sprinkle with sea salt. Bake at 350C until leaves begin to turn dark green/black (but not burnt) and crisp up like chips – about 10-15 minutes. WATCH CAREFULLY as they burn quickly and easily.

  3. Tammy – I can’t guarantee the boys will dig on the kale chips. Palmer likes the crunchy aspect, but is always hesitant on the green factor and in the end never eats more than a few. Also to note: gas is a common factor post kale chips. However, the sweet potato fries are a hit. It might help that he started on sweet potatoes with an insanely delicious sweet potato casserole that we make in my family, but maybe not … could have just been a fluke. Good luck with them either way!
